I ate one once, barbecued it. The flesh was quite mushy, but it didn't taste bad, it just didn't taste nice. I think asian cultures eat them all the time but they probably know how to prepare them, all the spices etc.
If they come from really murky waters and have a "bad" taste to them, you can let them live in clear water(swimming pool, raintank) for a few days, it'll clean them up.

on a few of the lakes here in wisconsin the wardens will pay 2-4 dollars a carp do get those fuckers out of the lakes. My brother and dad go all the time and slay the shit out of them
