We get huge ears/chicharrones on the corner. Freshly fried, usually with a little crispy hair still on em.Squirrel brains and eggs , calves brains and eggs , squirrel dumplins , chicken dumplins.......
Yum yum......Like my gator tail young cuz the bigger they get , the chewier and stringier they turn into.......anyways.....
Sent GF ta town so I could grab a piglet for processing.....Can we say "whole hawg" on da smoker ?........now if ya`ll REALLY wanna get deep south , let`s talk about get`s done with the head after comin off the smoker 24 hrs later.....
Anybody ever made head cheese with brains included , or fried pig ears ?......

And chipolines (fried crickets) are the best thing I ever ate. Nothing like fried bugs , tasajo (rehydrate dried beef), and smooth mescal served out of a red plastic gas can while lounging on the hillside outside of Oaxaca.
