I like to take real good care of them.

Pork chops smoked over Pecan from my tree

slowly brought to 170 degrees internal temp

Transfer to a pizza pan and spoon on pizza sause

Then add fresh slices whole milk mozerella

into a 250 oven until melty

then plate up with quinoa, and a vegetable Medley with garlic butter sause. Corona beer to wash it down

Then I send them back upstairs to smoke what ever they like before going back to work.

I think they are having fun tonight .........

Today, we made our first Sunday sauce with homemade bracciole, meatballs, and pork neck bones simmered for four hours with a dash of Spanish wine.
The meatballs are moist and tender, the pork falls off the bone and the bracciole makes you want to marry it. The parmesan is covering up the bracciole.

Cider vinegar, basalmic,fresh garden Lemon juice,fresh garden Lemon Thyme, garlic, olive oil, cracked pepper, salt, and Hawaiian raw sugar
