1 gal. pots are fine for what you have left on the plant, though I usually prefer not to transplant things I intend to reveg. 24/0 in my limited experience seems to do a better job at getting plants to reveg than 12-5-2-5, but I've had success with both schedules. As for how much to leave, more is always better. However it's kind of a balancing act as you want to harvest the herb on the plant, while leaving enough to reveg it. I like to leave at least 2-3 branches, at least 4 buds for new growth to sprout from, and as many large leaves as possible. Yours look about perfect IMO
