I had the best food in Austria when I was there in 2000. Had the yummiest potato pancakes in Salzburg, and we ate Christmas Eve dinner at this restaurant and the meal was one of the best I have ever had!

the next time you visit my country
you have to go to Vorarlberg,

beautiful mountains, beautiful valleys
and the cheese there is one of the best in the world
i promise!!!

this dish, called Käsknöpfle (also known under the name Käsespätzle)
is usually prepared with 2 -3 kinds of cheese
one very sour strong the other spicy but less sour
which gets stirred into very small little dough buttons
topped with crisped onions and some herbs.

Sometimes i get these great ideas like puttin bacon in the oven Lolz

I was trying to multi task soo i put the bacon in the oven ( never did this b4 ) with the corn bread .I go in my garden an get caught up by the time i come in my house the bacon was burnt to a crisp


I woulda loved more bacon , I think the chipolte mayo really kicked it up a notch

Bacon in the oven is killer. I have only done it a couple times, so You should check the Web B4 using these instructions.
1st line a cookie sheet with foil. 2nd, lay Your bacon on the foil side by side. 3rd put bacon in cold oven. 4th set temp to 400deg. 5th set timer for 20min. 6th, take out of oven, let sit 5min. then drain grease, and ENJOY.
The bacon will not look quit done when 1st taken out, but finish's nicely, once allowed to set.
For thick cut bacon add 4min. add a couple if You like crisp bacon. I like mine to droop just a little when held at one end.

Give it a try, and I assure You it will be the only way You cook bacon. Plus Ya just wad up the foil and toss it. the sheet will need very little cleaning.

Man, I stopped using vegetable oils for sauteing etc, (high smoking point and all that). I use homemade lard rendered from pork my family eats, and schmalz (poulrty fat) for frying stuff up. Wow, it is great. You can do simple things to refine and purify it into a very attractive product.

New scientific evidence points to these saturated animal fats as being really much healthier for frying foods than stuff like canola, and although raw olive oil is very healthy, frying with it not so much. In fact, the dogma about saturated fat being Satan is finally going into the trash heap where it belongs. You don't have to eat animal fats to be healthy, but they can be a very healthy part of your diet.

And the taste! Wow! Everyone here just loves it. Just ate some fresh kale sauteed in cleaned rendered pork fat with some chopped pecans and EVOO on it. I almost lost consciousness from the transcendental tastiness of it, and could feel the healthyness of it in my bones!

I hear Ya, Brother Man. I grew up with a bacon grease jar next to the stove.
Mannnn,,, pancakes fried in an Iron skillet w/bacon grease, Mmm!!!
The Wife just freaks if even think bout it. that is THE ONE consesion I've made in the kitchen.

Sorry to worry Your grease lovin heart mofeta, I consider it a sin too.

I use parchment paper and flip it about 15mins in... Then save the bacon fat when cooled a bit.

You mean You can use parchment for other things than putting My Shatter in.lol
I have parchment in the pantry. I think I should buy some bacon, and try it instead of aluminum foil.

The Wife, and I went to ZOMBIE Burger recently. I had a Double with BACON, Jalapeno strings, Pepper Jack, Sautéed Onions, Red Onion, and a Blue Cheese Mayo. Black peppered to taste(Mine). The Wife and I shared a 1/2 order of Blue Cheese BACON Garlic Fries.:huggg: and of course I had a Budweiser to wash it all down.
