Sent GF ta town so I could grab a piglet for processing.....Can we say "whole hawg" on da smoker ?........now if ya`ll REALLY wanna get deep south , let`s talk about get`s done with the head after comin off the smoker 24 hrs later.....

Anybody ever made head cheese with brains included , or fried pig ears ?......

We get huge ears/chicharrones on the corner. Freshly fried, usually with a little crispy hair still on em.
And chipolines (fried crickets) are the best thing I ever ate. Nothing like fried bugs , tasajo (rehydrate dried beef), and smooth mescal served out of a red plastic gas can while lounging on the hillside outside of Oaxaca.

Anybody ever made head cheese with brains included , or fried pig ears ?......I clean the head and give what`s left to the dawgs , but folks live for the hog head cheese down here...not really into it , but I`ve had it once or twice to not piss off where I was partying.......anyways.....

Had head cheese from a cow many times, tis gooooood . Never got the opportunity to try pig cheese. Heard it's not as tastey. Anybody in here ever tried pork fat pie? True southern heart attack on a plate

I`ll make yas a roast beef "po-boy" with "debri/meat trimmings and gravy/au jus", all the cheese and fixins that`ll rival anything from Pat`s , Geno`s , or Tony Luke`s cuz I`ve been to all 3......but.....

Wife would just smoke it... So I do better growing less but making sure it's stellar. I've been told though by subjective patients with much experience that mine is the best. So I'm proud of that... pride doesn't buy lobster though.

HL I'm contemplating a scaled down X Pattern Love Machine for the winter... in tents. My tents are 6'4" cubed, I'm thinking 1 K in the center, 600s in the corners 2 on at a time 6 hours each pair a' la Heath's tree grow. (read it years ago). What do you think? Tent too small? I'm not looking to grow trees like yours but maybe scaled down to 75% of what you do.

Thanks Fred... yeah I remember more clearly today that Heath's grow I was thinking about was TWO monster trees.

I would need to spend $$$ on some new equipment to go that route... just an idea that's kept me up a few nights. I'll probably just stack 1Ks in the middle of my donut, either way I know I'm going to burn way more light this winter.
