dont worry..tar-tar is raw..and heavely spiced and ya make it with diced beef..or tuna..i wouldnt wanna go and use ground up lips and assholes!..your burger sounds awsome.

Andouille Burger

Mince up a link of Louisiana andouille hot sausage and kneed it into a pound of hamburger. Add a teaspoon of onion powder and a couple of drops of liquid smoke too! Make patties. Place some blue cheese into the middle of a patty and seal it into the middle (so it's inside the burger). Grill over coals. Place grilled caremlized oinions on top. Make some Cajun mayonaise for it---I teaspoon cajun seasoning, 1 teaspoon tabascco sauce stirred into a half cup of mayonaise. Lettuce and tomatoe on the burger too.

Are you going crazy from the thought of it yet? :laughing:

It's all about the meat for me.. Grass-fed beef from a local farm.. well marbled sirloin and tenderloin trimmings, ground fine, almost an inch thick and cooked rare Brioche like the TS used is perfect, but I can't find it locally.. so fresh egg rolls work pretty well, plit and browned with a little butter. A hunk of extra sharp cheddar and some homemade herb mayo to finish.

I'll try the egg on my next one.

Oh yeah, this is my kind of thread...

My favorite style is twin fatty patties with pepper jack on top of each one,
lettuce, tomato, sauteed onions, pastrami, a fried egg, sri racha hotsauce all
pinned between the thinnest potato bun you could find.

Oddly enough, one of the best burgers I ever had was a normal cheeseburger
with pepperoni on it...and a side of chocolate sauce to dip it in. Sounds
strange...but its reeeeaal goooood.

mackawber I made your burger and it kicked ass! I used rabbit sausage though. we had some left over in the freezer. it was great.

romma burger or reuban burger -

black cracked pepper corn seasoned burger topped with swiss cheese and sour kraut on a toasted brioche roll with thousand island dressing, romaine and tomatoes.

I like to BBQ mine with a Thai style sweet Chile sauce(its also got lots of garlic), the brand I find around here is called "Big Dan's Bento sauce. I cook it on the burger, and then put a little more on when topping my burger. That sauce is also good on meatloaf, mmmm mmmm good! Its mostly sweet, but with a hint of Chile flavor and heat.

Man, these all sound so outrageously good. I've gotta try that Andouille sausage addition Mackawber mentioned. With carmelized onions...hell yeah. I've got a heavy cast-iron skillet that carmelizes onions perfectly.

Screw Christmas turkey, what I really want is the perfect Christmas burger.

1/2 lb black angus burger cooked medium with siracha, jalapenos, pepperjack cheese and bacon on sourdough with lettuce tomato and onions....

not for the faint at heart...or ass hahah :)

The supreme burger:

Chopped peppers with minced beef made into burgers then fried

Brown some onions in a frying pan, add ceaser sauce then grated cheese untill its all melted.

chopped jalapenos and bit of salad in any bun i tell you it lives up to its name

the burger I had a few weeks ago was very good......the pattie itself was about two inches/54 mm tall, cooked to perfection and had an excellent texture... delicious clear juice ran down my chin with every bite.....it was lick the plate good!

I went back to the same USA style diner food joint a few more times and the serves were smaller and the meat patty was not quite as juicy...still good, but not fantastic as the first one I had there...it's a new restaurant, a hubby and wife thing..

any chefs here with a few hints to making quality burgers with 2 inch thick meat patties?..please get "Kitchen Confidential" on us and spill the beans

Che....I wouldn't want to eat that monstrosity every day of the week but if I was really hungry, high as phuck and i promised myself, to workout big time the next day then I'd order that big burger..and probably lick the plate after.

Chamba, you'd want to use a fatty ground beef: 80 or 85 percent lean. Anything leaner than that is going to come out too dry. And don't over-mix your additions into the beef, as that will toughen it.

If you're grilling outside (don't laugh, it's possible where I live!), put it on the least-hot part of the grate and cook it slowly...maybe six minutes per side. That's the only way you're going to cook a two-inch burger all the way through without charring the outside (though some folks might like that). Indoors, I'd pop it a few inches under a broiler and check it every few minutes. When the juices run clear, it's time to eat.

i went to a famous burger joint on the island of kauai called duane onos char burger i got a burger called the local boy: teriyaki burger with grilled pineapple cheddar cheese and onions best burger ever and there fries are awsome.
You had their Burger, but have you been to Bubba's Burger on Kauai? Best burger on the island .. and their fish sandwiches are excellent too.

i didnt try theres but heard bout it my girlfriend said duane onos was way better so i tried duane onos and i was sold lol .i loved the breakfast menu for mcdonalds in hawaii the rice eggs and portugese sausage is the best ever mcdonalds food.

best burger always starts here. 80/20, making burgers with anything else is a sin.

Howz about a Kobe beef Burger, stuffed with braised shortribs & foie gras, served on a homemade Brioche bun with Arugula, caramelized onions, homemade ketchup & Pommes souffles!!!!! Basically heaven on a bun...as well as a HEART attack!!!!! Peace
