I just wanted to let you in on a little inside knowledge. If a store or restaurant tells you that their shrimp is fresh and not frozen, they are full of shit. Shrimp gets frozen on the boat. Here we have big freezer boats that go out in the gulf for a few days and come back with a shitload of frozen shrimp. So it is impossible to get fresh unfrozen shrimp unless you catch em yourself.

This does not effect the quality of shrimp like it does fish.

Real easy to make

Homemade Dough
Olive Oil
Bag of Broccoli Florets seasoned with minced garlic, sea salt and EVOV
Black Olives - I like them thick sliced
Tomatoe Slices - first item I put on the pie so the stay nice and moist
Shredded Mozzarella
Sliced Provolone - put it on just after the tomatoe slices and cover well...It burns easy
Little bit shredded Cheddar
Ricotta cheese

Hey CT, any help with this? I bought a few NY strips and immediately put them in the fridge in a vinaigrette to marinate, but I forgot about them. So now they have been in the fridge for like 36~ hours? Are they still edible? I have no idea about this type of thing....i usually marinate just overnight :eek:

Kickass Paddi. I love Lamb.

With Lamb chops, I marinate them overnight with salt, pepper, garlic powder, lemon, fresh rosemary, and olive oil. Draining off the marinade before cooking might keep them from being too greasy. (olive oil + lamb fat = too greasy)

wow that lamb looks good. i love lamb even though i feel guilty for eating it. the best lamb you will ever try is indian style rogan josh. if you can go to an indian restaurant order that, nan and rice and your fuckin set for a great meal..

It was a 16oz ny strip that had marinated for 3 days.

and now i am depressed, but somehow....somehow it's still..."good"

P.S. Extremely hot cast iron + steak = more smoke than one apartment can handle

As far as edibility, they are safe.

Might taste a little strong though, might taste great. Champagne was a accident...

I have tried to cook a steak in a cast iron pan...Only did that once.

Steak still tasted good huh? That was all that marinating! If this is the first steak you have ever overcooked, then you have a stellar record. Glad it still tasted good!

I'm a fan of "finishing" steaks in the oven after sealing the juices in with a hot skillet.

I like mine medium to medium-rare depending on the cut.

I have a regular gas oven but put a stack of a couple pizza stones on the floor, works really well, I turn the oven all the way up and let it get fully hot, put the pizza in and then turn it off after about 3 minutes, the residual heat finishes cooking it in about 7 more minutes. Have to resist the temptation to open the door and check on it, don't want to loose that heat! :noway: Nothing like crunchy crust fresh dough baked on a stone, smells and tastes so good. :yoinks:

This one is just tomato and cheddar, surprised me how tasty it was :smile:
