Hahaha seeds are tough things. Just don't fool with em at all till the bottom of the cube's got a lot of root mass stickin out. Don't check em, don't adjust the height, don't do anything. Just let them stay damp (not drenched) and the right temperature.
I don't think I've had problems with seeds in cubes or rooters or anything like that. The seeds are strong enough to push out at least a couple inches I'd think. And it's good to worry about not stressing them, but the best way to do that until they're at least 6-8" tall is water them when they need it, monitor environmental controls, and leave em alone.
For the record, I've germed all my seeds for everything the same way - herb garden, weeds, veggies, whatever.
Drop em in a cup of room temperature water. Seeds naturally have a little bit of air in them. When they sink that means the air has replaced the water and the seed will germinate. Then you can plant them while the shells are still hard without risking damaging anything.
Oh, questions are always wonderful and the attitude is good. Part of learning is finding the balance between curiosity and patience though. If you try and change too much too quickly or if you try and change stuff without knowing what you're doing or checking with an outside resource first (book, forum, whatever) then you'll end up screwing up a lot more than if you'd just chilled and waited a bit longer for more definite signs.
Almost everyone does it to some extent when they start out. My first example that comes to mind was that the seeds never rooted fast enough and I was worried something was wrong, so I pulled my starter pods apart to check up on them. Killed or mutilated the baby taproot every single time. *facepalm*
