I doubt Saul's security guard picked the ricin out of Jesse's pocket: Jesse was brushing the guys hands away as he was trying to frisk him and he would have needed to pick the entire pack of smokes out of the pocket and replace it with another pack -- or Jesse would be missing a pack of smokes. Otherwise, he would have needed to pick a specific individual cigarette out of a closed pack in a pocket. If the dude could do either of those things he should be doing a stage show in Vegas instead of his muscle for hire gig. I agree that was about muddying the waters a bit as the guard did appear to go for his pocket after Jesse walked on -- tricky.
Jesse said he checked in the morning and the ricin was there, so if it wasn't taken by Saul's body guard, then it would have to been taken at the lab when he was cooking earlier that day: We see Jesse get dropped off at his car after work, at Saul's and then back at his place on the couch playing with his lighter. He then receives the phone call about the kid and head's out -- the camera work on that phone call scene was interesting as it focused mainly on Jesse's jacket on the back of the couch and barely on him at all. Interestingly, in all this time since being dropped off Jesse hasn't had a smoke because I presume he would notice the ricin cigarette gone if he had opened his pack -- when I was a cigarette smoker, the first thing I did getting in my car was light one up -- and certainly after working all day in a smoke free environment. Also, Jesse was playing with his lighter but still hadn't lit a smoke by the time he was back at his place -- seems odd. Not sure it means anything, but I would have thought Jesse would have lit at least one smoke before the hospital scene.
The theory that Walt framed Gus for poisoning the kid would be a good twist, no doubt, but I'm not sure I'm buying it at this point for the reasons above. There is something tantalizing about it, though -- I suppose because it would indicate Walt has broken from his old self completely if he would be willing to put a child in harms way for his own ends. As Zymos says below, I don't think he's put all of those values aside.
On the car thing, I think it is possible that Gus might have caught a reflection off of Walt's glasses or binoculars, though. It would explain his suddenly aroused suspicions and is certainly possible -- I remember thinking Walt should lower his glasses, but we never saw any flash or glint so I figured there was none, but it's possible that we just weren't shown it and Gus did pick it up. In which case, I would expect to see that scene again in the next episode from a different angle showing Gus picking up the glint. In fact, if it was down to anything Gus saw I would expect to see that scene again showing us what Gus was seeing as it needs some explaining either by showing us or by Gus telling us (likely in conversation with one of his guys). For the time being, though, I'll stick with Jesse blowing it by saying the kid was poisoned and that statement arousing Gus' suspicion.
