Cioppino

Cioppino

Here we go!

This one can be costly. I have about 50 bucks going into this meal, but it is true comfort food and well worth it.

picture.php

Fresh Dungeoness crab, large wild shrimp, cherrystone clams, large sweet orange Sea Scallops, Mahi Mahi

I often make my own Cioppino sause, but this time Im going to take a shortcut. Im using Domenics sause. It is very good for store bought. I got it at the Italian market.
Heat your sause slowly over low heat

Pour Yourself and your friends a drink. Im having a Snappy Tom Corona, with some pickled asparagus, and dilly beans. It doubles as an hordouvre

picture.php

I almost forgot.... You absolutely need a quality handcrafted bread. I think Traditionally, Sourdough rounds are served in San Francisco with cioppino. I also like a good french bread, and that is what is being served tonight. Genova

I cut through the shell to clean the shrimp, and leave the shell on for cioppino. As I was taught.

Wnen the kettle begins to lightly bubble, add Your white fish, I sometimes use Halibut, and have even used Shark. It needs to be a firm white fish, and tonight Im using Mahi Mahi from Hawaii.

After about 5 minutes, in go the shrimp

In about 3 minutes add the cleaned crab

Last but not least, in go the Sea Scallops

You should serve this with an Anti pasta

What I have here is assorted olives, cherry tomatos, grilled marinated artichoke hearts, Chick peas, kidney beans, and a slice of wonderful Gouda cheese from Holland.

I like to serve the bread sliced thick, with Quality Extra virgin olive oil, seasoned with fresh coarsly cracked black pepper, and coarse kosher sea salt

A Tangerine Wheat beer goes nicely as well.

Live life fully. Love. Enjoy!

Am I the only one jealous of Dr PurPur's food pics?

Can you be my personal chef?

Think this may be my favorite thread on IC right now...

Someone mentioned Steak!

Someone mentioned Steak!

How about some New York Steak, Italian style tonight? And to jazz it up a bit, shall we go Surf and Turf? Ok!

Lets get our ingredients together

picture.php

I seasoned the steak with fresh coarsly cracked black pepper, Kosher salt, and extra virgin olive oil.
picture.php

Threw it on the BBQ (Charcoal) made a Ruby Red Grapefruit /Hass Avacado salad, with fried Wonton strips.
A Heirloom tomato vinigrette went well too.
I sprinkled sliced black olives over the steak after it came off the grill, then grated some Mozzerella over it and under the broiler for several seconds until partly melted.

Fold them over in a triangle and pinch the sides shut. I use a fork to pinch it.

They should look like this when you are done.
picture.php

Into a 350 degree oven for about 25 minutes and they will come out nicely browned
picture.php

Plate it up! Im serving with sides of Tuscan beef vegetable soup, with a dallop of sour cream, and sweet cherry tomatos with assorted olives. A dip bowl of lite sour cream, seasoned with Tapatio, Chipotle, and ground chili is a welcome addition
