don't know what kind of non-fiction you like, but this is one of my favorite history books. It's on the conquest of the Aztecs by Cortez, and includes tons of first hand accounts:

Every Hunter book is amazing - first one to read is Hells Angels...
Talk about true stories, and it's one of the least "fantastical" stories to come from that skewed, twisted, brilliant mind.
And the SAS Survival Guide - a must have for every collection.
