What do you say to the fact that I've seen better hydrogreenhouse produce than indoor?

It's true.

Just wondering why brighter intensity better spectrum lighting over the very same "indoor" fed substrate in the same ventilation would produce a lesser product?

I think it may just be because it's massed produced "whatever" that you may be having issue with.
