Brisket and smoked meats

I love me a good brisket :yes: After a few hundred $ buying them and practicing i think i finally hit it, and made an almost perfect brisket last night.

10Lbs Brisket
marinate in fridge minimum one day in Dr Pepper, 2 days if possible
5am pull out of fridge to bring to room temp
hot pepper mustard - homemade rub
smoke in charcoal water smoker for 8hrs
put in oven and maintain 190 temp for two hrs
serve it up :yes:
















also made corn in the smoker, could have cooked it longer though..
and fresh tomato's, sliced with a layer of mayo on top, then crumbled hard boiled egg + salt/pepper
A good meal !!

great snack right there! good to see you know how to handle a brisket too!

Damn that looks good. Now I'm going to have to stop at the BBQ shack on the way out to my garden.

Is that a Brinkman you're using? Got a new Weber Smoky Mtn. this spring, I loves me some good bbq.

secret sauce



dry rub



8hrs in the smoker



added sauce about 6hrs in, then again to the other side before going in the oven



oven @ 350 for one hour, then 200 for another hour. Falls off the bone !!
don't forget to add the beer, and cover :yes: a bed of onions always goes well with everything







and of course the tomatoes, i make these all summer long :smoke:



KSP - the label is melted to much to read, and it's a borrowed unit till i get my own

Looks to me like you got the smokin bug licked hands down! Finger lickin good that is LOL. Me thinks I see a smoker of your own soon eh? Them ribs look delish! :ying:

Got me another brisket marinating in DR Pepper :jump:
Gonna smoke her up this Saturday over at my moms house. And guess what, i found 55gal metal drums for $10 kinda close to my house. Previously used for olive oil, i plan to convert her into a large smoker. Thinking about a small trailer and maybe even catering at summer parties :dance013:

Try root beer instead of Dr. Pepper...

I use Dr. Pepper for hams... it's great, but switch it up if you dare.

Thanks for the tip :ying: I live in the country, and many local farmers sell fresh homemade root beer. I'll buy some next time and give it a try. Never smoked a ham yet, but it's on the list :smoke:

I smoke quite a bit of brisket and pork shoulder.

A couple 10 lb briskets are brined for at least 24 hours and then put in the smoker for up to 18 hours at 220*. (The meat receives smoke for the first 4 or 5 hours.)

oh man looks so good. never tried a whole pig yet... i usually do either spareribs ( 6 hrs charcoal and hickory indirect heat with a drip pan of water underneath use coca cola bbq sauce). i like baby backs too.... also love to do beer can chicken. everythiing indirect heat with either hickory or mesquite
