Backcrossing for flavour? NEWB!

Theoretical question, I'm learning at the moment-no practical breeding is in motion yet. :

Backcrossing a Dominant trait.

OK so I have my recurrent parent which I have worked to a point where it has all the traits I want, except for that is taste.

So I also have a plant which has the taste I want to incorporate with the recurrent parent.

So what is the best way to do this? Is it by backcrossing?

Recurrent parent (F) x Donor parent (M)-Has taste

\/
F1 Hybrid gen
(|||||||||||||||||||)

So I have the best plants showing the dominant taste trait. (|=best plants)
Obviously to judge taste I could only select Female plants from the F1 generation. So if my recurrent parent is Female, and the F1 generation plants (||) that I have chose for taste are female, then how can I carry on to the next backcrossing stage which would be to hybridize the recurrent parent with the donor parent when both are female plants?

HAHA just when I think I'm starting to understand this, someone asks me a question and I'm stumped.

Thanks for any help in advance.

It doesn't matter too much which F1 males you choose to backcross with as long as you either use a percentage, or progeny test. To aviod progeny testing, I just use about the same number as suitable females found in the batch. In other words, if you found 2 nice ladies out of 20, use two males' pollin. Try to choose males that most resemble those select females. Often traits will sort into combinations that, in large enough seedbatches, can be sorted into categories. By choosing the males that have similar combinations of traits as the 'select' females, you're more likely to get suitable plants as early as B2 or B3.
