I dont know what it is but I know the best sushi comes from ichiban and blue pacific. I also recently made my own sushi rolls. medium grain rice, sushi paper, salmon and cream cheese. it was awesome!
Yeah Uni is the flavor of the ocean for sure, and is an aquired taste. Similar to monk fish liver.
I got to say that the west cost has better sushi we are closer to the islanders and Japanese that created it. I heard somthing about Los Angeles having the highest population of Asians

Now as for sushi my favorite is... well most all of it but I love me some Hamachi (yellowtail), Maugro (tuna), Hirame (Halibut), toro (tuna belly) basically anything. I am adventurious when it comes to food in general.
I use to have sushi for lunch or dinner at least once a week for a time there. but that got expensive. ~50$ for just me at lunch was when i said Ok thats a bit extravagant.

Aaahh, yes. Sushi is one of my faves. I live down the street from a very nice sushi place, and on any given night it is VERY easy for me to drop $150 on sushi and sake. Even more if I have someone with me. My favorite is probably eel (no skin please) or octopus.
My favorite part about it is that it can be pretty filling with all the rice, but the sake still hits me quick. Getting full and feeling a buzz is a wonderful thing.
i usually like to order my sushi in...and then load em up with fresh salmon roe (hobo caviar) from my fridge that i get at the japanese supermarket...plenty of ginger and wasabi on the side too
For me, I like to keep it simple and go with sashimi w/ soy sauce/wasabi. mmmmmm. I can jam way too much of that stuff, but it's awesome. Poki is good too.
I was a chef fer a long time, and specialized in sushi fer three years....chap I was taught by learnt in Japan...and when I learnt, my teacher made me go thru a 50 lb bag of rice in 1 lbg batches before I was allowed to serve roll one.....
Most places do not serve sushi properly in North America......the rice is never the right temperature.....
If your rice is not at body temperature or just slightly above (95-103 F)....it's not good sushi....or at least it's not the way it is supposed to be.
I only use one type of rice (Tamanashiki) and place the most importance on the rice, because after all, the word sushi means vinagared rice....so if yer gonna make sushi, the rice has to be 100% bang on perfect...if not, it's not worth eating.
That why I laugh whne I see take out sushi in a fridge, and that kinda shit......it may look right, but it sure aint fooking sushi worth eating, that's fer sure.
My first sushi experience was horrible, I went to a jap buffet that had some nasty ass yellow tail and a few other things siting out on the buffet line. I took two pices only got through about 1/2 of one before spitting it out in my napkin. It took me 2 years and alot of convening to get me to try it again. I had the munchies and was hungry enough to eat anything. So I tried it again and have been hooked ever since. I would eat it every day if I could afford it. My Fav is Unagi.
Not sushi but I love this dish... Extremely hot spicy soup... You can guess what's inside. Its called, "Maeun-Tang" It blends wickedly with Korean "Soju=liquor".

Big plate of fish.. Usually wrapped up with lettuce or sesame seed leaf and garnished with garlic, hot peppers, and (Cho-jang = spicy sauce)... Simply Awesome.
