Thanks hfm, yes it was delicious, but nothing very special. Where do you come from that you have no restaurants like this?
We would have to drive several hours to find something similar. We like to cook though and those dishes are something we might try and copy by looks atleast ;) I'm glad it was yummy for you and thank you for sharing :)

Yes bread dough with garlic and cheese wraped in a bamboo stick.
This technique Common in Uruguay, Argentina, south Brazil creates results similar to sous vide, longer time, lower temperature. Minimum 6 hours in the fire.Even the toughest meat can become extremely tender after roasting for 6+ hours.
