What did you have for dinner?

I cooked dinner for my parents tonight ( and most nights of the week) and tonight i went with a mexican style meal.


we started off with a shrimp, scallop, and mussel cerviche. For those who dont know, Cerviche is a meal that originaled in central america, and consist of raw fish cooked in citrus juice by the acid. Some other ingredients are fresh onion, tomatoes, green and red peppers, cilantro, and lots of LIME juice. Most people eat as a salad or with chips.

When using shellfish i cook the fish first and then combine it all together and chill for a few hours.

for the main course we had vegetarian enchiladas with alot of cheese.

mmmm...what did everyone else have so solve their case of the munchies

lobster and crab alfredo...mixed cajun seasoning with the alfredo though...I like my shit spicy!

Haven't even eaten dinner yet. Getting pretty hungry, though. Not much here to cook and I really don't feel like going out (girlfriend has the flu.) A sub sounds pretty good right now, though. Subway, maybe? If you're interested in a great sandwich, follow these instructions: 12" Monterey Cheddar bread with turkey, bacon, cheese, cucumbers, a little ranch, a little oil/vinegar and whatever else you want on it (pickles, lettuce, tomato are good choices.) Making me so hungry. Haven't eaten since earlier and it was two bacon cheeseburgers and a four piece tender.

Mmmm subway is good, but you should try Publix Deli subs. They are like 10x better than subway because they use the fresh veggies from publix produce section
