canadian vs US eggs
this is a question thats bugged me since i was a little kid.
we'll just use scrambled eggs as the "general example" (but noticed the same in other prepped eggs) why are they sooooo yellow in the US and sooo pale/almost white in canada. i know i'm not just speaking from a 1 time occurance...i noticed that when i was about 8 and noticed it everytime ive been thru canada since (more than 20 times easy) ...so whats the difference between chicken embryos from canada and the US ?

We have sun down here and that turns them yellow. They have snow, which influences the color. I am surprised that Canadian eggs aren't cracked, as what chicken wants to put their ass next to a frozen earth to lay an egg.

Fresher eggs are generally more yellow and so are eggs from chickens that eat good feed, when I had a flock of chickens (and one duck) the eggs I got where much more yellow than store bought, also the breed only changes the color of the shell not the yolk.

The yellow of a yolk is diet related.
I raise various (bantam/smallish) chickens ("chooks") and a very rare breed of genetically endangered "Heritage Turkey" and I've observed that the yolks of a well fed "barnyard stroller" tends to frighten the city folk as the color leans towards the ultra bright yellowish spectrum of things. ![]() Add Hemp (and/or even flaxseed) to the poultry diet and the eggs become nicely omega 3 and 6 enhanced. https://en.wikipedia.org/wiki/Omega-3_fatty_acid I see 50 lb. cash and carry sacks available (heat sterilized) of hemp seed from the various parrot seed purveyors (@ parrot / bird Shows) in the USA. Get your wallet out as it runs a couple couple, few dollars a pound these good old days. ![]() Quote:
This full bearded white Silke chicken lays a nicely sized medium brown egg starting at about 5 months old. Silkies come in many color variations and are often kept as pets as they have very sweet and gentle temperaments .

I eat Organic Valley eggs.....they have extremely dark yellow yolks and are tasty
here's what their website has to say......Many people think brown eggs equals organic, but egg color is based on the breed of chicken! Our family farmers feed their chickens chlorophyll-rich plants outdoors and alfalfa and kelp in the winter, contributing to deep yellow yolks as well as oyster shells and natural minerals for strong eggshells. so the color difference must be what they are fed.....OV also has omega-3 eggs which they fed the chicken og flax seed providing an 225mg of Omega-3 per egg |
