The lugs are a good idea, if you use 30A contactors they should have lugs instead of screws.

It is better, if you use ring terminals for the screws it will work.

Hey hvac guy, What brand and model of high temp shut-offs are you using in those pictures?

They are Ranco etc111000, about $100 each, you can add a latching relay if you want to add a push reset button. The Ranco can be set with a temp differential to prevent the power coming back on until lower temp is reached.
