Babbas are making salsa

We had enough tomatoes to make some salsa...so guess what? we did!! ..hehehe...we have made it for a few years now and have found a process that works for us, I'm sure there are lots of different ways to do it, we love the burst of flavor you get from home made salsa...not too much else better!
Once you get the jars all cleaned up your ready to prepare the veggies....the first thing we do is core the tomatoes, they need to be parboiled to get the skin off...



once they are all cored then its time for the hot water...I just leave them in the water for a few minutes just long enough for the skin to come right off...



all skinned and ready for the next step...what beautiful tomates...so firm and full of flavor...



Next we roast the peppers on the BBQ to get the skin off...
we use a few different kinds, bells, anaheim's, jalapenos






heres the peppers after they have been roasted and skinned and ready to chop up....you have to be careful when doing the jalapenos, you'll want to wear some sort of gloves or something, they can burn you bad, and dont breath any of the fumes when they are roasting either...



I chop up Cilantro real good and add that to the mix...hehe...I love the smell, very pungent, a little bit goes a long way...


here are the jalipenos and garlic [garlic has been chopped and peppers roasted]..we blend them together so there are no big chunks of that, we want that to blend in good...



Here is the bucket filled with salsa ready to go into jars...yummmm




We put them in a big pot outside cuz it was hot and didnt want to get the kitchen all hot sealing the jars...the finishes jars are put into boiling water for 10 to 15 minutes to seal them up.....



Here is the first batch done....cooling and sealing...wheeeh...what a job but now we will have salsa for a long time....the only thing we could say about it is it could have been a bit hotter, we ran out of jalipenos so thats as hot as we could get it...its really good, dont get me wrong, but a little more bite wouldnt have hurt



We made some chips out of corn tortillas so we could try it out and it was yummy...the flavors were so amazing, just burst in your mouth and tasted sooooo good!



Hope you enjoyed the visit in the Babbas kitchen, we loved having you guys here...heehe...we are going to do another smaller batch and make it hotter!...and hopefully do a round of just tomatoes which are perfect for adding to lots of sauces, spaghetti, chili, chicken, whatever...love to you all!!...

Thanks for sharin your salsa making methods Mrs. Babba. I have tons of fresh tomatoes, onions, and bell peppers, but no other peppers or anything. Suppose i could go buy some. Next year i'll be a little more prepared.

AWESOME!

WE love growing and processing our own produce at home. I've made small ammounts of fresh salsa, but have yet to can any for long-term storage. Great idea. So far this year, we have pickled jalapenos, and I have made my opwn "sun dried tomatoes" using our Romas and the dehydrator. Today I just processed grapes into juice for jelly making.
Self sufficiency, and home made products rock! Keep cranking out the tasty looking products, Babbas.

I make mine in much the same way you guys do!! I just never make enough to can I cut an "x" into the base of the tomato to make peeling easier, it usually all comes off in four pieces.
