What is this for compared with splatter platters ?

If you don't have a water bath setup you could use the jacketed splatter platter and a pump to circulate water at your desired temp. IMHO a lot of people are using unsafe water baths with electricity, non-sealed potentially sparking switches and heating elements in close proximity to a lot of butane that's an accident waiting to happen. Much better to have your water heating setup in another room and run pipes in between.
