Take as much as you need. Don't be afraid to give haircuts especially with sativas and limited space, and especially if they've never been topped before. They should get topped at least twice to minimize stretch and maximize yield.

This is the way I'm leaning also. Take the tops....give them a few days or a week to recover....and then reassess and decide whether they need to be topped again.

Agreed. No sense in rushing flowering at this point. Might as well take the time necessary to get a few more tops. With 80" of headroom I don't think that I will take 6"....but appreciate the knowledge that I could if I ever need to.
