I dunno LOL
I could mail samples of my smoked fish just about anywhere if it was up to me
I'm Metis, which is one of Canada's aboriginal peoples, decendant of Chief Little Hunter (Ochmenahoos) of Saddle Lake Alberta. I take a lot of pride in my culture and harvesting/preserving wild game, fish and the many edible plants we grow or harvest from the land. I've been practicing the art of smoking meats, cheeses and fish for close to 30 years now.
Funny thing about the smoked salmon..... I like it, and I sure do make a pile of it throughout the year, but it's not really my thing. 90% of what I prepare gets vacuum packed and mailed off to friends and family. The trick is, getting your name on my Christmas gift list hahahaha

if Gypsy is in UK, I'll attempt it with the next batch. Got a call from the local native band that they have fresh wild BC Sockeye and red fleshed Chinook salmon coming in so I put in an order for 50 fish for Tuesday. Fingers crossed

Some people are just born lucky I suppose, born within a community/culture that is so in touch with nature, because they need to grow and/or hunt to survive. My grandparents had to grow to survive, before during and after the last world war, so they instilled an affinity with the earth within me, which was good.

These days most urban populations are so far removed from being self-sufficient, that they would be lost and probably starve without a supermarket.

Smoked fish and cheese man....Mmmm. I have a river just 100 yards from my house, it's called The Thames, and I doubt that I could find the sort of fish you regularly land where you are, although it was said ONCE, that salmon had returned to The Thames.....and I have seen a few trout, but would you want to eat fish that came out of a river that serves a major capitol city?

As for getting on your Christmas list, sign me up, I'll take the large hamper with the smoked caribou jerky...lol

Ochmenahoos...wow, well there a name of a tribe I have not before heard of...Och-men-a-hoos, it's got a ring to it.

Thanks....Gypsy

The "tribe" were mix of what we call Woodland Cree and Metis (the first explorers x aboriginal people). Ochmenahoos or Little Hunter, was one of the chiefs in the Saddle Lake region of Alberta back when the Crown, being Great Britain at the time, was settling treaties with the aboriginal folks in what would become Canada. Chief Little Hunter is a signatory name on The Crown's treaty #6.

I've heard of the Thames of course. My mom's side of the family originates from the Isl of Mann with a direct line of descent from the Duke and Duchess of Man, who made a deal for the Island with the Crown wayyyyyy back in the day and it's been British ever since. There is a castle in UK called Exton Castle which was also named and occupied by relatives of mine way back in the day.

man am I stoned !! sorry for my ramblings, it's all Antenna Seeds fault, this Purplelazerlite hits me hard in weird and wacky ways hahaha

yup, clean and fillet fresh, vacuum pack a flash freeze at minus 18C for 72 hours.
then it's ready for Sashimi (my favorite) and smoking. We don't flash freeze it for canning but it's recommended for smoking and eating raw/brined.
hmmm now "I've" got the munchies LOL
