well, I just finished up smoking a dozen fillets of Kokanee (landlocked freshwater sockeye salmon)
the recipe includes
1 tbl spoon garlic powder
1 tablespoon dried dill weed
4 drops liquid smoke
1/2 cup coarse pickling salt
6 cups demerrera brown sugar
1 cup pure liquid honey
1 pint bottle of Canadian pure maple syrup
zest of 2 large lemons.
1 gallon hot water.
dissolve sugars, salts, honey and syrup in hot water, then refrigerate
once cold put in the boneless fish fillets and soak for 48 hours, moving the pieces around at 24 hrs.
air dry on the racks for 12 to 20 hours
smoke at 110F for 18 hours with a mix of cherry, alder and apple chips
package up in food saver packs and mail to 4 different cities across Canada as a little taste of home for some far away friends
all that kinda yellowish stuff is fish oils LOL.... pure flavor packed with omega 3

Dude I love smoked salmon....On crackers with goats cheese,fresh dill and capers.
Some good holiday munchies.
Canadian sockeye is the best.

I take great pride in my smoking and canning.
On Friday I'm pulling out a 5pound elk roast and gonna brine it and smoke it into some kick ass wild game pastrami. It's a several day process but I'll post some pics when it's ready to serve

Not as flashy but quick and inexpensive... I like Ronzoni brand small shells but these will do.. they hold the lentils nicely. Like the sirloin tip recipe, which I've used twice already, TY shmavis... this only takes about 10-15 minutes to make and like the sirloin tip recipe, it is much better tomorrow..
boil up macaroni, heat soup, mix, eat..

As you can see from the date in the upper right corner, I've had this one about a year and a half. This is probably only about the fourth time I’ve made it (maybe fifth). It’s a bit more work than the Italian Hoagie one, but it's worth it. It was almost seven hours of cook time on high.

Have nothing to offer as I am still searching for options...
but damn! so much good stuff here! I used to eat Oreos or corn chips or cheese and crackers, just simple garbage food. That garbage plate or whatever it was called seemed like a heart attack on a plate, but it did sound good!

Health issues forcing me to restrict saturated fat, cholesterol and eliminate sugar have left me searching for healthier options. In my opinion, others even those without current health issues should restrict their intake of these as well, so as to maybe avoid being in the same boat as me. Sorry for the buzz kill, but I loved the smoked salmon and other healthy/semi-healthy/healthier options listed here. Let's face it, boiled spinach or turnips or something healthy seldom has the appeal of a big plate of cheesy, beefy or fried something, but there are plenty of healthy things I like, combining them into a healthy yet satisfying snack worthy of being called a Munchy (crushes the biggest hunger) must become a quest of mine! Lots of good ideas for sure, I love this thread!

It may not sound healthy but a plate of "loaded nachos" can definitely be healthy.

Make a Salsa to your liking (chopped tomatoes, onions, garlic, peppers, some herbs, salt n pepper).

Make some primo Guac!
Chop dem avocados, chope some more onions n tomatoes. Blend that shit up. Add some salt n pepper and a spritz of lemon/lime.
Mhhhm yummy and healthy.

Now to the Nachos.
They are indeed the least healthy part of it all. Carbs n fats n stuff but: If you don't go for say Doritos but take nachos that are "natural" flavor or maybe lightly salted or whatever, they aren't all that bad, certainly not as unhealthy as potato chips.

Layer them out on a big plate.

I personally love cheese and if you stay away from spray cheese or heavy cheeses, there are lighter, low fat alternatives that still give you that cheesy goodness, just maybe not tasting as "rich and cheesy" as say Gouda or Cheddar.

So I would sprinkle some cheese on the nachos and into the oven until melted (warning! NO MICROWAVE, shit's gonna get soggy!).

Once the cheese is melted, generously spread the Guac and Salsa on top.
I like a third dip in Sour Cream which goes insanely well with hot salsa and also works with the Guac.

To finish it up I sprinkle chopped olives and some cilantro or whatever herb strikes your fancy on top.

It looks great and to me, is a great middle ground between healthy and "nasty comfort food".


The only questionable ingredients of this snack/meal in terms of "healthy" are the nachos and the cheese.

If you put less of a premium on healthy and more of a premium on comfort food and satisfaction, you could add some dashes of chilli con carne on top after the cheese has melted and while you apply the Guac, Salsa and Sour Cream.
Chilli con Carne in itself is not unhealthy at all but I would say that step would take it from "snack food that can double as a full meal" to "definitely a full meal".

If you take a rich cheese like cheddar etc. and some flavored (I prefer cheese flavor :p) nachos, this whole thing might well enter the comfort food domain though and seizes to be borderline healthy.


In terms of really healthy: Call me old fashioned but a salad with some grilled chicken and some parmigiano always hits the spot for me. Even if I go extra healthy and take a balsamic/oil dressing instead of something rich like a honey/mustard or caesars dressing. The toughest part for me is to leave out the bread to accompany the salad.
