Summer Dishes
Post your pictures of your flavorful, colorful, healthful light meals that you're indulging in for the summer season. After a nice base of fresh food the smoke tastes and feels so much better!
We'll start with this steak with mushrooms and scallions next to a bed of mashed potatoes topped with sour cream, steamed carrots. Fresh parsley accompanies this tasty summer dish.

During summer I like to eat fresh vegetables because they are so available. A light salad with some chopped meat, cheese, and boiled eggs is nice. According to authoritys, They think you should serve something light in the summer because of the heat and something heavy or warm in the winter. Kinda like beer.

Sprout's famous burritos
This meal uses fresh tomatoes which are so abundant during summer. This is better than Taco Bell.
Marinate about a pound of cheap stew beef meat for 24 hours in italian salad dressing. Cook the meat on medium heat in a frying pan with chopped vidalia onions, salt, pepper, fresh cilantro, and some chopped jalepeno peppers (more=hotter). Add a small amount of cumin like 1/2 teaspoon. You could make a salsa with the preceding ingredients instead (except meat) plus fresh finely chopped tomatoes with a little water. Cook over medium low heat in a sauce pan for 30 minutes. This will be added later before microwaving the burritos. If you make salsa, you could have a few corn tortillas chips handy for dipping as a snack before dinner. Using large size flour or corn tortillas, put some of the meat mixture or meat + salsa, some canned refried beans, and grated monterey jack cheese (this is a substitute for mexican cheese) onto it. Heat in the microwave on high for about a minute till the cheese melts.Top with fresh chopped tomatoes (if not already added) and sour cream. For extra excitement, add some guacamole. Wrap it all together if you can. The microwave makes the tortillas soft so expect messy hands. Yummy! Serves maybe 3 people easily. A light beer goes good with this like tecate, corona, or budwieser. SproutCo- Eating lots of veggies in the summer is the lightest and the best! Your Sprout burritos sound like a nice summer evening snack how lovely. Microwaves make cheese nuclear hot. You should issue a warning on burning the roof of your mouth! Summer time is splendid with Lima beans and thin center cut loin chops! Finger licking good! A big salad with escarole and iceberg, cucumbers and onion, olive oil and vinegar. Oh ya celery too! So Scrumptious!
