A rueben sandwich, made with corned beef, Farman's sauerkraut (well drained via hearty squeezing), and Jarlsberg Swiss cheese, sliced thin, but laid on amply, applied to dark rye bread, toasted, with mayo and home-made horse radish applied liberally, and heated and melted open-face under the broiler, sufficiently to bring light golden brown spotting to the Swiss cheese. But without the $12-$15 café' price tag hanging on it...

A side of steamed broccoli, a glass of R/O H2O with lime juice added, and a dark beer (decided on a Guinness 200th Anniversary Export Stout, 6% abv; so many beers, so little time, and only 1-2/day by mandate of my own self discipline... Challenges...).

Had a calf moose (no cow visibly accompanying it) in the driveway a bit ago, eating on some of the tips of the trees that line our driveway. Had to curtail the dogs' pre-dinner outing for their restroom relief activity, in order to safe-guard them from any turf war with the local ruminant population. Moose in the yard are a pain in the ass!!

Egg plant parmesan; slices of egg plant about 1/2"+ thick, dipped in seasoned whole wheat pastry flour (w/ granulated garlic, white pepper, and sea salt), then dipped in egg and milk, then dipped in bread crumbs, fried in HOT coconut oil, laid out over a tiny amount of olive oil and vegetarian red sauce in a deeper casserole pan.

Then a thin layering of the vegetarian red sauce, topped with strips of aged provolone, grated Jarlsberg Swiss, and parmesan cheese, all layered more or less thinly.

Then repeat process for a total of 3 layers in a deeper casserole pan, and baked for 30 minutes at 350 f., then baked an addition 10-12 minutes at 380 f., or so, to put a nice golden brown on the cheese topping of the final layer.

Should be enough left over from this tomorrow for everyone at my home to eat for tomorrow's lunch... if they wish to..
