who loves jerky? (with pics)
...well i got off my ass yesterday and this morning and made my very favorite jerky.
this meat is elk that my dad got last fall in colorado...the cut would be considered the 'eye of round'. i cut it up by hand while it was half frozen (thats why it looks like i did a pretty good job) i soaked it overnight in my own perfect jerky marinade. ....this is what i do for 2.5 pounds of meat (that's the amount your looking at) 10 oz. Soy Sauce - Any brand 7.5 oz. Worcestershire Sauce - Lea & Perrins - Preferred 10 oz. Teriyaki sauce - Any brand 2 tablespoons Dark Brown Sugar 2 tablespoons Garlic Powder 2 tablespoons Onion Powder 2 teaspoons Cayenne Pepper ...then into the smoker this morning....3 pans of alder wood smoke in the first cpl hrs...then just use the low heat to finish drying w/ no more smoke...perfect! i love hickory wood for smoke too, and im not all that fond of mesquite for some reason. oh yeah heres the pics i promised... i will take a cpl more later when it's finished....also the "superthrive" is not part of the recipe (it just happened to find its way into the pics...lol) also ive used this same recipe w/ beef, and it works great....if u dont have a smoker u can make it using the oven ...just add a small bottle of 'liquid smoke' to the marinade. if u use the oven just set it on the lowest setting...(i even crack the door open)...and it only takes a few hrs to get it done.

that's actually pretty bad ass - how much did the smoker go for? And it just plugs into the wall? Post some pics of the finished meat!!! Does it turn out good? I want one of those smokers

yeah that smoker is the bomb...and works like a dream...their prices actually almost doubled over the past cpl years. i had the same one before i moved last year and about 2 yrs ago i paid $60ish for it. i went to cabelas yesterday and paid $100 for it this time. you could make one too, but for something like this why bother? ...and yeah it just plugs into the wall. i will post pics when its done...it's far better than anything that you can buy in a store. im not advertising, but here is the website for the smoker if anyone is interested....the one i pictured is the smallest....it's the 'little chief' mini.
