Roasted Leg of Lamb

Get your meat thermometer, rosemary, garlic, thyme, oregano, ginger root, orange juice without pulp.
Fresh herbs, whole garlic or minced garlic and ginger root are best.

chop up all the herbs, rub down your leg of lamb(5lbs boneless).

stab your leg of lamb and stuff the holes with the garlic and ginger root about midway into the meat.

use a large pyrex pan, preheat oven to 400F

put the leg of lamb into the pan, pour about 2-3 cups of OJ into the pan. stick in the meat thermometer into the thickest portion of the leg.

bake the leg of lamb for 20min at 400 then reduce heat to 325

baste the leg of lamb with the juices and OJ every 30-45min

Cook until desired wellness is obtained. I like mine medium.

Lamb isn't lamb without mint jelly.

this sound's killer!...how's it with the ginger? i have never used ginger with any sort of roast..(or any other large cut's of meat) now you have me wondering.

What I'd do instead is build a roaring fire out on your grill with charcoal and your choice of wood, I'd probably pick apple or pecan. The wood is important so that it gets to a high temp. Cook it HOT and quickly on the grill until it is still pink inside but done enough for you. Lamb cooked all the way through isn't really all that tasty, it starts to tasted kinda weird at that point. But, yeah, all the garlic and herbs you can put on it, the better. Curried Lamb...even better...yum!!

Its all about slow roasting and not letting the meat dry out

if the OJ dries up or starts to, add more.

Alternatively you could cover with foil... and then remove the foil the last 30-45min of cooking.

I forgot to mention I like to grate the ginger root and rub it on the outside w/ the fresh chopped herbs.

I would like to recommend u guys try a Lamb Kleftiko (greek lamb dish) !!

You can roast a whole leg or rather cut up tennis size ball pieces, poke in a few half garlic cloaves, sprinkle with organum , white pepper and rock salt.

Then wrap each piece in some thick foill. Wrap it well so the juice doesnt escape. ( its therefore preferable to prepare each peace on the foil its being wrapped in.)

Then you slow bake on 150 deg celscius for approximately 2 hrs.
