Collard Greens anyone?

One of my favorite foods of all times...with fatback or jaw to cook it with.

Any other of my southern brethren have input?
(all other comments welcome too, we don't discriminate here!!!)

Hambone is the key to awesome collard greens. Also white beans. You can get tree great meals out of one.

Ham one night, with all the fixings - cornbread, fried okra, mashed potatoes, and fresh black eyed peas. Ham bone cut up and used in white beans and collard greens. Cook em all day, and for dinner that night you have some deep fried catfish with homemade hush puppies, with some white beans with a dash of hot sauce, and collard greens with just a dab of vinegar and some hot sauce.

Finish with hot blackberry cobbler (peach is good too) with a pat of butter on top, or some home churned vanilla ice cream melting down the sides.

damn that sound's good..just down here in the south..sub the white bean's with some red...and it's on!!

I was just having this discussion the other day on someone elses thread.

For New Years day every year my mom makes Collard Greens (for money in the new year) black eyed peas (for good luck in the new year) and cornbred (to go with the other stuff, I guess)

We have smoked turdey legs in our collards (it gives it that good flavor, and you get the meat off of the big turkey legs) smoked turkey legs are available in Wal-mart, out west were I am, also she adds a little fresh habanero pepper for the heat.

I like them with neck bones as well, but its not as much meat and the smoked turkey legs work out really nice.

I have some leftovers in the fridge right now, so Im gonna smoke a little keep reading icmag and knock some out just for ya'll.....

I jus knew I shouldn't have clicked in here! Damn NiteTiger, you sure know how ta hurt a feller. I'm sittin here eatin a shitty frozen pizza, hungier than ever now! lol...... I don't know the brand name, but my ol lady found some canned collard greens at the store that are purdy damn good for commin out of a can. Very well seasoned, you can tell there's some pork fat in there too. Not bad at all for commin out of a can. I'm gonna go see if we have some in the pantry right now! lol Thanks alot guys! lol...... NiteTigers post reminded me of my ma, ( god rest her soul ) that woman could cook! From frog leggs to fish, rabbits to roast it didn't matter, my ma was the best! I sure do miss her, not just for her cookin. Yall know what I mean... Anyway, I'm off to the pantry for canned collard greens! Best I can do for tonight. lol Take care... BC

Salt and peppered? yum. Also, had field peas the other night instead of blackeyes.
