Garlic!
I've just got to say that I fucking love this stuff. Raw, dried, cooked, roasted, diced, minced, however you make it...it's awesome. Lately, I've been a big fan of roasting whole heads in the oven and just snacking on them. Crazy flavor. Anyone else out there dig garlic?

my mum didn't /wouldnt use it as a kid growing up so i had no idea what it was.....and 1st few times i tryed it in something i was like...what the hell is that?.....yea i like to use it in cooking...offensive after smell though....some ppl really stink after....i try to plan when i wont have to deal with ppl face to face to use it......i do like to go heavy on it with the kids and send them home to mummy for some smelly kisses..
..got a rather large strain that my grandfather used to grow....so happy i got some.....have to keep remembering to grow it every year .HH. =]-~

Heya gmb, I'm a user of garlic. Frequent user.
I probably use it in over half my recipes. Roasted is good, I usually put several cloves throughout a pan of vegetables and roast them together. Great stuff. Sometimes the odor that is excreted from the pores can be powerful, but I haven't had that problem in years. Immunity perhaps? |

that 80's american cooking icon, the frugal gourmet (Jeff Smith) used to always go into long diatribes on "garlic being how we should know that god loves us ". but it goes beyond that there are also many health benefits of garlic, and i dont mean warding off vampires, its a natural blood thinner which helps in filtering the blood lowering; blood pressure cholesterol and helping to prevent atherosclerosis, garlic also contains natural antibiotic and fungicide. the only real downside to garlic is the most common side effect, halitosis, you know garlic breath, also when eaten in large quantity its metabolism creates a compound that can only be filtered in small amount by the kidneys making people seem to smell like garlic. garlic is a definite must in any kitchen, it just makes food so much better.

i srsly put garlic in everything. my mom used to put garlic in everything she also roasts she chops the top of the head off then puts oil and salt and roasts it. man i just eat a whole clove whole its soooo good usually gives me a stomach ache after i eat about 2 cloves.

Yesterday, for example, I roasted one head with some olive oil on it. After I ate that one, I decided that another one sounded really good. I was too impatient with the second one, so it was pretty raw(but hot). This morning, I had to go home from work at about 10:00 because I knew that I was going to stink if I sweated at all. Well worth it, though. I have to agree about roasting it with vegetables. It's fantastic. I also really like roasting it with a beef/pork roast. The juices give the garlic incredible flavor.

Garlic is not a spice....garlic is a strongly flavoured vegetable and should be treated as same.
One does not count garlic by the clove....one counts it by the head (1/2 head, full head. etc).......anything less don't count. We go thru about 4-7 heads a week in our house (2 adults, 3 kids). I personally put garlic in everything that is not dessert.....and have been known to slip it in there too (very darkly roasted garlic and dark chocolate go together.). For those of you who take their garlic seriously, try growing it yourself if you have space. It is VERY easy, and the quality and freshness of the garlic you will get is second to none.

Oh yes, garlic! I like the hard neck varieties, personally... the bulbs with the hard core in the middle. I believe they're best for more northerly growing climates.
Health-wise, garlic's uses are too numerous to list casually here. I like to saute two heads of garlic in nothing more than some olive oil and season at the end with some salt. I like em where the edges start to caramalize, so it gets stuck in your teeth like candy. Uh, I'm getting hungry now!When I used to live in Italy (as a boy), one of our most common side dishes was chopped garlic, olive oil, black pepper, local Roma tomatoes and onions with some vinegar. Not cooked, of course. That's it. Whew! Talk about a warm feeling from the inside out! hehehe I like to eat a clove with a bit of room temperature cheddar. A great feeling of well-being overcomes me after the garlic begins to digest. Enough cannot be said of garlic. I even love the smell of my breath and hands after handling/eating garlic.
