I had the same thing happen to me.
And wondered if I mixed up seeds or something.

But a bit of research revealed this it's a different type of spinach native to Asia.

My Galilean Spinach set to seeds in cups trying to get them out early. Try making some new seeds! In my experience there was a higher percentage of females to males.
