I'd say it's not the best pick

I would prefer something like this, and focus on ventilation/heat as one parameter and the humidity as another parameter.

The unit you linked to, will turn your ventilation off.
When the heat or humidity, is below the set point.
If one of them is met, the fan will turn on.

There would be high risk, that during the night when the temps are low.
The humidity will be high, fan turns on and pulls in a lot of cold air.

And thank you for the analysis, low temps with high humidity would definitely set off red flags for me.
