I LOVE, love LOVE chicken livers. Sauteed in butter and olive oil, a sprinkle of kosher salt while they're frying. Keep them just pink in the centers or they'll be too dry and tasteless.

Y arroz con pollo, tostones, platanos maduros (my favorite and I'm not even kidding about that), pasteles con yuca, mofongo con yuca, yuca con yuca (kidding), sorullos, and my own specialty (outside of habichuelas) -- empanadillas. Empanadillas de queso, de carne, de vegetales, y, DE GUAYABA.

I haven't made empanadillas in YEARS. Nor sorullos, but I do have some Amapola corn flour/meal in the cupboard.

Pernil, anyone? I make a pretty bomb pernil, even if I do say so myself.

Mia, my grandmother wrote a cookbook on cooking in San German. I have some favorite recipes from the book, including the stuffed (Gouda) cheese ball and a chicken and garbanzo pureed soup that's very good for you while also being quite tasty.

You might like it. It's chicken livers wrapped in bacon and baked (or skewered over flame) in teriyaki. I usually have duck breast the same way, instead of the liver (Dove season starts Sep 1st. Dove brest would be PERFECT! Mild liver-iness dark meat that is DELICIOUS). Most folk will put a chestnut in the center. I generally skip that part. Sorry, I don't have any pics ATM, but a quick google search should bring up lots of images and even a variety of ideas through recipes ;) It's a bit of a poormans front dish, but a clever cook could make it their own..

Night before last was Thai basil eggplant with scallops and shrimp, preceded by fresh rolls. I'm addicted to fresh rolls now, and I think I'm learning to make them pretty well.

Dave's been on me to make a pot of habichuelas, but he keeps forgetting to buy me the right kind of beans! I need black beans or black-eyed peas. I have red beans, but don't care as much for them. Maybe I should just make them.

I always eat BEFORE I check out this thread. Yum but not liver, sorry. Got any chicken gizzards. Fried squirrel with biscuits and gravy. Maybe some fried okra or hominy.

I just cooked some up last night. I freeze all the innards they put in the whole birds, then when I'm ready to make a pot of stock I thaw them out, separate out the organs from the necks and other bits best used for stock, then sautee off the innards and use the other parts for stock. The dog usually gets the gizzards, but those are my son's favorite bit, those and the hearts. We fight over the livers.

Here a typical german meal "Erbseneintopf", pea stew, more for winter or autum, you can freeze it and the following days it tastes better and better. It´s includes smoked pork chop, cooked sausage, carrots, potatoes, peas of course. We eat it with spoon and fork, the fork is for dipping the meat in mustard.

Hickory smoked Tri Tip...

smoked this the day before last, I pulled this out a lil early to take some slices for a steak, bacon, egg n cheese english muffin... with a side of ham steak and OJ :) ; before I put it back in to finish smoking for a total of 12 hours



the color didn't come out very well in the photo's

so this was seasoned and placed to dry before the tri tip was prepared... then once the tri tip was cooked the Salmon was placed in the smoker.

then smoked for 16 hours....



I like just about anything... that's smokeable!

Take some potatoes-slice them-in some creme fraiche-salt -peber-a tablespoon with dijon sennep into also-can put 2matoes-cucumbers-or radisser and so-on the top-oh and onions into also..
Good to many things-as here like Dirty Dolls-Danish national dinner-
Frikadeller-you cant live in DK without-you can make "Dirty Dolls"

Maded out of pork-with egg into-some ahh Mel ?-a bit milk-salt pebber-onions in small bites-into-sometimes,i also make some bacon-doing those-before it,s came into the those dolls-and then made those frikadeller-if not those way-the bacon-cant be finish-of course not-why so...taste exelent-also then cold..
