There is an interesting segment in Howard Mark's book Mr. Nice that gives some info on how they would pack large shipments to avoid detection by sniffer dogs. Not really rocket science, but does take a bit of thought.
If I remember correctly, they would have one of the cops they had working for them bring in dogs to test out the level of odor control before shipping the load out.

There are other tricks that people use quite effectively. I was riding with some people and we got pulled over and went through the dog search and crap.
They walked the dog around the car about 6 times and he went nuts outside the car but jumped back out when they put him inside and went back to the front wheels every time. The handler got pretty upset and kept scolding the dog and trying to get it to alert inside but it just kept going back to the tires.

After they let us go the guy driving told me that there was several pounds stashed under the back seat. Then he told me that he had sprayed the front tires down with piss from a coyote bitch in heat. They must have figured that the dog was smelling something the car had run over.
