It seems that you have root issues. Get some Captan Fungicide, mix it at one tablespoon per gallon and DRENCH the soil to run off. The plant should begin to pick up within 48-72 hours.

Leave them alone! When you get a real humid day open the tops for about an hour. Then close them up. The high relative humidity in the air will help to keep the flavors instasis.
