Perlites fine. But if you're in recirculating like the pic shows, I'd recommend the larger grade. The small stuff is a PITA in your drain fittings and if it makes it back to your reservoir.

you don't need to leave your tap water out at all. The level of chlorine used for disinfectant isnt harmful to plants. Some hydro growers go so far as to add extra chlorine to prevent pythium.
