I bought 2 new Belgian waffle makers, one kitchen model & one commercial maker. My home unit arrived today, after cleaning it & doing a burn to cook off its newness I was ready to rock.

Used exactly as per their instructions it had me cranking out perfect waffles from the get go, my very first one could have sat proudly on a restaurant plate.
about 10 years ago I attended a benefit breakfast feed for a friend, the feature was supposed to be awesome Belgian waffles, and they were. They were the best I'd ever had, of course being in the food biz for many years I inquired as to the brand/product being served; it was Carbon's Golden Malted Original Pancake & Waffle Flour. They were cooked in F.S. Carbon commercial units, not for sale & available through lease only, buy their batter & they give you the top end makers.
I knew the purveyor of the Waffle Feed made them Belgian's 'pop' somehow and so I figured on adding some of this to the mix, it worked very well kicking up the malt & sweetness factor of the waffles.
I added 1 TBSP of Carnation Malted Milk to each 1 cup of batter mix, it could be increased to 1.5 TBSP, but as malt mixes are sugar based adding too much could result in waffles getting gummy & sticking.
In any case the outcome was superb, perfect Belgian waffles from a $40 counter-top maker, the batter mix was also awesome, I now make a better product than I can buy anywhere else. The Carbon's Golden Malted Batter cost $22.00 for 6 ~ 16oz cans.
my commercial grade FS Carbon waffle maker should arrive Friday, it was purchased from a private estate (not a restaurant) and looks like it's cooked zero waffles, all surfaces including the griddles are factory fresh, cost me $200 delivered for about a $1,000 machine. pics to follow.
