Mmh basil!
One of my all-time favorite dish is tomatoes, mozarella, basil and olive oil, bit of salt and pepper as well. Also works in a sandwich with butter (and less oil).
Chamomille is a favorite of mine too!
Most people will disagree but I love the taste of valerian root tea. Even weirder, I dip cookies in it haha.
It's strange because everyone I know hates valerian root.
I remember brewing a 3L valerian-chamomille tea that turned out completely opaque and black, half a cup worked like a charm for my insomnia.
Unfortunately since I don't have a real garden I haven't tried different varieties... So can't comment on that :(

I had a wide collection of ethnobotanicals, remember liking Sinicuichi and Damiana.
Palo Santo incense is really nice too.

Mexican oregano, pungent, use it all summer and dry the rest
over winter.

Same with tarragon. I grow sages and lavender too.
Got some mint and rosemary going.

I can't get the basil to produce, I fail at that.

Herbs are important part of my daily meals.

All grown in various containers around the back porch.

i like chamomile and mint for tea.

i have a thing for parsley and dill, don't really use them for cooking but instead eat them as such. only kithcen herb i've grown was stevia and the novelty faded quite quickly, didn't really find use for it.

I have some Palo Santo incense and I love it, I like it better than the copal and frankincense and myrrh. Every now and then at parties I'll catch the same Palo Santo scent in women's perfume too.

gcms test of Palo Santo...

Limonene 89.33%
α-Terpineol 10.9%
Menthofuran 6.6%
Carvone 2.0%
Germacrene D 1.7%
γ-Muurolene 1.2%
trans-Carveol 1.1%
Pulegone 1.1%

If i could find some haze that smells this way, i'd be in heaven

I just dried my first batch of oregano and it doesn't taste like oregano. It smells and tastes like fresh lawn clippings or hay, very similar to weed that was dried too fast. Really disappointed.
