Harvesting in-pot in coco in grow closet. thoughts?

Hey all! So I have a few questions and concerns regarding my particular situation. I'm very small scale, and very space limited, now,ive heard of letting your plants dry out in their medium and was wondering how effective said method was. Im growing in 2 gal Smarties, in coco. My harvest plan looks like this, flush, trim some of the bigger leaves, cover until dry. All while leaving her in the grow room. I only want her to dry enough so I can chop her up and freeze cure her. any thoughts or suggestions?

Coups you elaborate a bit please? Like I stated this is my first attempt and im kinda limited. I do have a box to hang them in I suppose. The harvest is starting to intimidate! Lol.

Just cut the plant by the main stem and hang it upside down whole right where the pot would be. Move the air around and take some pics
