Which chamber of your's do you like?

Did you have a problem with the seal of the pressure cooker?

I think a drawback to the pressure cooker would be you can't see inside. An advantage would be easy to heat. What do you think about inserting a temperature sensor thru a cord grip mounted in the lid?

You can also put a pressure or heat gauge on the top of the lid. I was looking at those gauges myself, haven't done it yet but would just take drilling a hole in the top then put in the appropriate gauge. They are only about $20, the gauge.

I like the large glass dessicator best.

Seeing is indeed the drawback to a solid chamber. Tap Plastics has 1 1/4 thick clear acrylic plate, that would make a dandy lid for a stock pot or pressure cooker,

A temperature probe would be easy to install through a threaded coupling and compression fitting.

Yeah, I thought about the plexi. I wasn't thining quite that thick, but I think it would be a good idea.

Do you think that cutting a 1/2" wide by 1/4" deep groove to hold the gasket in place for assembly would be a good idea. Tap should be able to do this.

I would just glue a flat gasket to the plastic. If I used an O-ring, I would cut a much smaller grove to fit. The O-ring manufacturer can give you the crush specs, but I usually leave about 20% of the O-ring sticking above the surface.

I was thinking about the gasket that came with the pressure cooker.

Where would you buy gaset material from?
