You could contact my folks in SoCal, but they ripped out all the English ivy years ago. That's where we would collect our escargot, only the biggest! Honestly, if it were me, I would just start scouting older neighborhoods where there's plenty of plant cover that keeps things moist. Too many neighborhoods like that in SoCal to even know for sure, but one thing I do know is that the English ivy that grows so lushly is the best place to find the biggest snails.

You read my exchange with h.h. about garden snails, or what? I sorely wish we could get them to grow up here.

Nom nom nom nom nom nom...

If they're raised well in captivity, or cleaned out well if you're using wild-caught snails (2 weeks on cornmeal and fresh, clean water) then the flavor is reminiscent of beef tongue.

Depends on the backyard. Most garden snails that people poison were actually brought from Europe as a readily available and easily caught food source (snail herding, yeah!). They found the North American continent much to their liking so they're found pretty much across the US. But not on my land (Cali's Sierra Nevada). Not a single 'regular' garden snail to be found here. Yeah, sure, banana slugs and other very pretty, but inedible, snails, but not my favorite garden snail.

My first escargot was eaten at a restaurant when I was a toddler, I barely remember it. The next time I remember eating it was when my dad had all three of us girls go outside early several mornings in a row to collect snails from the ivy, only the biggest ones. They all went into the Habitrails where he had set up jar lids with cornmeal (to clean them out) and water. They were left in the Habitrails for two weeks, then one day he comes home with a shit-ton of garlic, parsley, mushrooms and good butter. We feasted that evening.

Me, too!
i see,lol ill leave thoes alone. neven knew you could eat thoes bastards.lol
The only reason they exist in North America is because they were brought here. And what else could be easier to catch that's not only so tasty, but NOT crunchy on the outside (sorry, no ants, grasshoppers or crickets for me), probably has good protein, and doesn't need cleaning outside the feeding and preparation?

Preparation consists of putting the live snails into a pot of water that's at a good, rolling boil. They come right out of the shells, and then they're ready to be paired/prepared however. I've only ever had them a couple of ways, and what's pictured above looks delicious.

I wish I loved escargot. Same with fish. If snails and fish tasted as good as filet mignon (to me, of course) I'd be fishing and snail hunting all day long heh.

hahah I've tried it all. Strangely, the one fish that I could bring myself to take more than one bite of was seared ahi.
