chili powder, from jalapenos? how do you dry them?

great harvest, but why are them so dark coloured?

by chili powder i just meant finely ground jalapeno powder to use for cooking... never have done it, but i got to many peppers to just eat one by one...

this will also be my first time drying.

i thought i would review this thread, but i would like to be a dehydrator...

the color i guess is a result of indoor, LED, hydro growing. they are quite healthy... ;)

the really dark green ones are just about to change colour.

i ate today more or less that amount + 10 habaneros. todays main dish was jalapeño/habanero/cheese/ham and fried bacon tortillas ovenbaked :)

if you want to dry the jalapeños, i recomend letting the jalapeños get propperly red.

when i dry jalapeños i use the oven as for all chili drying. electrical oven on 60ºC and the chillis cut up lengthwise and spread out on a baking sheet. well honestly i jut pile the chillies up. i do a drying session a week that takes 2-4 days or so. i fill up 3-4 trays with a thick layer of chllies... leaving the oven door slightlly open lets the humid air out and makes it all faster - and also improves the colour of the finaly dried chili.



i have eaten most of the jalapeños i harvest. too tasty to save :D

i will probably try your method using the oven...

and next time, i will wait til they completely ripen...

just gotta do something with them, can't let em go to waste.

maybe some salsa too....

this rememberes me that once, I have turned my vape into an dehydrator to test some homemade dehydrated treats. :D but this time I would need something bigger, so I think I'm gonna order one. thanks for the ideea about the jalapeno powder. first time I heard of them beeing used as powder when they are not smoked.

I'd love to hear some more about your indoor chile garden. How are you growing the jalapenos inside? Under what kind of light? How tall are these plants, by the time they're fruiting? Pictures?

I started some green bell peppers & grape tomatoes in a top fed/constant flow DWC setup this year, under some fluorescents, .. They all got too tall and unwieldy and I ended up hacking 'em down before I got any fruit, ..

I'm always looking for indoor gardening/flower/veggie projects! I'd love to hear & see more about your setup! :good:

I got a few question about getting plants past winter.
Is it hard to do it ? Selecting some seeds from my peppers sounds easier to me to do...
At what temp I need to keep them. I dont have much free space... Can they stay on the balcony for the whole winter. It goes down to -10, -15 maybe.
Do I need to prune them more ?
Basically I dont know anything :D

Under 0 degrees C the cells walls are beeing destroyed by the expansion of the freezing water inside them.
I usually reveg them at around 20 degrees under some floros, and keep the under 24/24 hours light for the winter. they need some amount of photosynthesis to survive over the winter for sure.

great pics! can you eat those naga jolokias?? :wave:

i dug out of the garden 3 habo's, 2 serrano's, n another unknown hottie... put em in pots, n have em in my greenhouse room...

since i destroyed lots of roots when tranplanting, i pruned the top way...way..back.. hoping they survive...

explosive gbb - any chili can be turned into powder. different varieties have different flavour.

today i built a smoker from an old stove i had once heating one of my workshops. the smoker will work in a method i saw from a russian dude on tv smoking fish. he used a closed cylindrical container with herbs in the bottom, and a fire underneath.

i think the wiremesh baskets took the longest time of everything. just missing to make a chimney for it tomorow and im ready to start smoking chilies. first ill give it a burn "in" session :D

i got lots of fruit tree wood lying around. also got some almond tree and what not. lets see what combo of herbs and woodchips i will use later.. i still havent decided.

its going to be fun to give it a test go :D first burn will be without chillies :D hehe since i haven eaten tons of jalapeños and they are getting to the final stage are not producing too much now, i will use bubba (baccatum). the bubba is nice with quite thick flesh, even though not as fat as jalapeños, but it should take on some flavour anyway.

:) first smoking session went ok. used almond wood... nice flavour and smell. lost some of the chillies since i didnt control lthe heat enough, and some of the chillies in the bottom of the smoker got a bit charred.

allready made a chipotle style salsa :)

next session will be in a few days. this time i got olive wood, apricotwood and plumwood.. i will do some modifications to the smoker. i want to keep the fire a bit further from the bottom of the smoker, so will lift the whole lot up a few inches more.

i used about a gallon of wood chip soaked 18 hours. next time i will use more wood, and also soak for a longer time.

i used a mix of all kinds of hot chilis i got now, including some trinidad scorpion morouga blends. next time i will do the same.

i also noticed the chillies with thinner walls get charred faster than the thick fleshed ones.. so next time i will package the contents of the baskets better, so the thin skinned ones are covered on all sides by the other fat fleshed ones like bubba, guindilla de navarra, pimiento de padron hot, and the cayennes.

specially the bubbas took on a nice flavour :)

going to do a third smoking session in a few days.. this time im using mostly plum-tree wood..

gotto say im impressed with the baccatum "bubba" - they are producing like crazy, and showing no signs of autumn or winter damage. also the chinensis pi 22088 is amazingly resistant and a good yielder.

even the trinidad scorpion is still producing some chilies, but im sure soon she will start to fall in to the colder temps.

Have you seen a frost there?

Frost has killed everything here with the exception of a couple lettuce and spinach sprouts, and they got turned in to the soil today.


I just tonight finally got around to starting my new pepper plants for over winter,....

Did 10 Bolivian rainbow plants to gift to friends and family,
3 Kung Pao
3 Tri-color Variegated, ( I really hope I took seeds from the right pod on these! Upright pods the size of a fingernail, but leaves that are heavily mottled with white blotches. I really regret not taking a pic of the plant I harvested the pods from :frown: )
6 Thai
4 "Super chili" ( I took two of these pods from the grower, ate one and kept the other for seed, Not NEAR as hot as Thai, and a bit larger upright pod. Should be a nice spice chili)

:)we are not having frosts, and i dont think we will have it for a while either.. but u never know what the weather can be in 2 weeks hehe

anyway - im smoking chilis rigth now.. its 10 in the night and there is still lots of woodchips left.. its been 8 hours smoking... going to be a heavy flavour on this batch!

im going to plant my baccatums and pubesence's within the coming weeks. should be good start. still i have realized the msot important thing here is not to start early - since the summer heat and sun is almost too strong.. stunts most plants :D but the trick is to keep them as healthy as possible so when the cooler temps come - they will be vigorous and strong..

anyway - the only plant i got that got trouble with the cooler temps was the zanahoria triangulo - a weird yellow triangular shaped chinensis. hot and nice.. so i will plant of it for next year too.

i have kep seeds from 1000'0s of pods. been many annoying days picking seeds with three pairs of nitrilic gloves. i kept seeds of all kinds that i have growing. and a hellalot of them. im not gonna buy more seeds for a while hehe..

so all in all its maybe 30 kinds i gotto plant for next season! better do it bit by bit! going to be several hundred plants again :D

doesn't anyone dig up their plants n put em in sunny window for the winter months???

i have a greenhouse attached to the house (with heat), and dug out 8/9 or my fav's... cut em way back, and already after 2 weeks new growth appearing... just wondering...

wow.. been raining heavilly a few days so i havent been able to pick chilis since last weekend. got 3 shopping bags of mxed chilis. mostly bubbas and pi22088. both last are really producing like crazy for the time of the year we got..
