The less you transplant, the less you stress your plants. If you have the room to go straight into 3 gallons from clones, go for it. If you have to start small, no problems there either, just try to repot before they get rootbound. If they're rootbound, just break up the root ball a little bit before you pot it.

for me plants always droop when they need transplanting, droop like they need water (since i know i never overwater) and dont perk up when i water them.

If your plants are growing fast and healthy, and you have good enough skills that you cause no transplant shock at all, then you'll probably have to transplant every 1-2 weeks during veg., depending on what increments of pot sizes you're using.

My plants are pretty big before I put them in there final 10g pot.

I start with a 16oz cup. The plant will stay here for 1 month,Up pot to 1g stays here until plants are sexed another month at least. Then into the 10g for flowering. plants can get very large in this arrangement.
