I have a few seeds (~50) from a recent grow where a maverick hermie sperminated a few female plants. Should I toss them, or is there some potential for non-hermie offspring? Would you grow them?

Well if it was a true herm then I suppose you got yourself some fem seeds......

Were they from a legit herm, 50% male 50% female sex organs or were they from female that threw a few late flowering nanners due to stress?

If they were from a legit hermie I'd say trash them.

This would be a true herm. You can't really see the pistils clearly in this pic ( they kind of look more like leaves cause only tips are showing )but they are definitely there, only female pre-flowers and 7 days after switching to 12/12 got this.

These were true hermies - began throwing pollin during veg 1-to-1 alongside female parts. This was under 24 hours of light and the plant looked perfect. Accidentally hit some plants in flower during a watering.

I would trash 'm , maybe there is some potential but I wouldn't want to waste my time on it while I have plenty of good beans laying around
except if there are special conditions, for example it would be a strain I really want/like
but if it's nothing special/I have better seeds of the same strain I wouldn't bother

So, the general consensus is that true hermi pollinated seeds are no good, but late-stage females throwing bananas are worthwhile to pop?

I would grow at least one. Just to educate and satisfy my own curiosity. You will be aware of what may happen and be more prepared to deal with it this time and down the road. Just me I like to experiment.

my curiosity would probably be inversely proportional to the backlog of other seeds i had to go thru.

it's like every other seed you've ever had - you won't know for absoposilutelytively what it'll get you until you crack it.
