Steamed Cheese Burgers

I saw a show where they boiled em in a bag then torched the outsides before serving. makes total sense to me and I've been anxious to try, but I dont eat burgers often.

Its so awesome cause it keeps ALL of its juices except the excess oils and shit you just pour out of the container. But its the most juicy best thing ever. and we steamed the cheese and torched the bottom of the buns
it was PERFECT. never going back!
 
White Castle has been steam grilling their sliders forever. They lay an inch thick layer of diced onions on the grill, and then lay the burger patties on top of the onions. The steam rises from the onions and cooks the patties.

Well im in SoCal so i dont got the luxury of the great white castle... except the frozen ones that come in the box in the freezer..

The luxury of having the great White Castle, now that's irony !!!!
Around here you only eat them when you are drunk beyond common sense.
You gotta love that SoCal "culture".

I saw on the Food Network a burger joint that steamed there meat it looked interesting.

I've been to White Castle for the first time in St Louis MO ordered 1 burger and a fry they laughed at me, I didn't get the burgers the fry's where good.
 
The Porcelain Palace, as some refer to White Castle, is all about the burgers. Tiny, little, greasy, burgers with five holes in them. Steam grilled, of course.

They can be an acquired taste. Normally acquired as a drunk teenager at Four in the morning.

Sounds like a variation of Sous-vide, which is about the same technique but often slower (no boil). Meat cooked this way, then given a sear before serving, can be absolutely freaking amazing. It's too bad I don't have the resources to do this at home, I'd cook so many things this way!

white castle is good once a year if you don't mind the gas.

IMO, Fat Burger and In & Out both beat the pants off of white castle, though.

West coast, you ain't missing anything.

I saw that too and was wondering if there was a way to replicate it because the burgers looked so good. I forget the name of the restaurant, but I think they were located in Maine or someplace in that region. I think it was one of those shows hosted by Marc Summers.

Bowls set inside of a dutch oven or large pot with lid on a steamer rack with an inch or so of water will make an easy improvised steamer cabinet.

alright.. Experiment 1: Failure. Gallon Zip-Locks do NOT stand up to a boiling pot of water, but the burgers turned out quite tasty on the grill anyways.

Im gonna move on the seal-a-meal when I get around to digging it out of the garage. From what I saw before and after the bag broke, this is gonna be sweet.


That Burg'rTend'r looks cool.

Found this on the internet I have not tried it so your on your own.

Steamed Make Classic Burger patty (No. 1); lay in a hot skillet, add sliced mushrooms and onions and season with salt. Pour in ¼ cup water, cover and steam 3 minutes. Top with sliced cheddar; steam 1 more minute. Serve on a soft bun.
