Dehydrator works well, smaller ones or cayenne types dry well in the sun for a few days then in an area with good air movement but out of direct sun.

I watched a show on peppers on the history channel. They were using the ghost peppers in India to make a paint to paint on their fences to keep elephants out.

Used to have a scotch bonnet pepper farm in Westmoreland, Jamaica. The buyer in N.Y.C. said they were the best scotch bonnets he ever saw come out of the Caribbean. Not as hot as these, but very flavorful. They call the choc. habenero devil domination pepper's near Negril. Story goes after cooking with one you can't cook with the pan for three days, to let it cool down. LOL

Very nice pictures. Since moving to the temperate PNW Ive had a hell of a time growing my fix. Thai chilis do the best here so far. I'm keeping two habaneros, a thai chili, cayanne, and a Northern Chinese chili plant alive under fluros (if the aphids don't kill them by spring) Seems that keeping them as perennials is a way to actually get something out of them. Also want to try grafting to Nicotania rustica and maybe to a potato rootstock. Anyways you guys should check out the Peruvian Rocoto pepper. Big fucking plant, hot chilis that seem to soak into your skin like nothing else, very thick walled. Probably good for smoking like chipotle.
