Ruth Chris sweet potato casserole

Here's a little backround:

A friend of a friend of mine used to work at our local Ruth Chris steakhouse. For quite a while at least once a week we would trade this guy an 8th of dank each for the filet mignon dinner (to-go of course, gotta be at home where we could take bongrips :joint:)with all the sides - creamed spinach, ahi tuna, shrimp lobster bisque, and sweet potato casserole. Literally my favorite munches I've ever had to this day...

Anyway, my favorite part of the meal was always the sweet potato casserole. Ruth Chris steakhouses have great food (at least ours does), but man this casserole blows anything similar that I've ever eaten out of the water. A year or so back my buddy found this recipe online. We made it a bunch of times an it's the exact same stuff. I hope you guys try it and enjoy...

Ingredients:
***For The Crust***
1 cup brown sugar
1/3 cup flour
1 cup chopped nuts (pecans preferred)
1 stick butter, melted
***For The Sweet Potato Mixture***
3 cups mashed sweet potatoes
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs, well beaten
1/3 stick butter, melted

Directions:

Preheat oven to 350 degrees F.

Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside.

Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a mixing bowl in the order listed. Mix thoroughly. Pour mixture into buttered baking dish. Sprinkle the surface of the sweet potato mixture evenly with the crust mixture. Bake for 30 minutes. Allow to set at least 30 minutes before serving.

By far my favorite side for a good steak.....

Sweet, pretty close to my recipe too. I had to make 2 5# sweet potato casseroles for thanksgiving last year!

I'm glad you guys like, I'm sure you'll like it even more if ya make it! I've often thought I whipping up a batch of blackout butter and tossing it in with this recipe. Haven't taken the dive yet but I might have to soon... If I make it this weekend I'll toss some pics up. Peace! :joint:
