unless you can freeze them super slowly and consistantly...
I dry mine out for a few days then pack it into little paper bindles clearly labeled "POLLEN" and it goes into the freezer. I only put a tiny bit in each bindle that way I can unfreeze only as much as I need at a time.
this is just a guess but I would think that it would be better to flashfreeze them if possible, I thought the faster something is frozen the less damage is done to the molecules and stuff, like bird's eye peas are supposed to be all super delicious because they flash freeze them and it retains alot of the flavor because less damage is done to the peas cells and molecules or whatever...I think its the ice crystals forming that can cause the damage and in flash freezing the crystals don't have a chance to form of something. but I dunno..just guessing on all that....I could be totally wrong too cuz that's all from memory and I can't remember where I heard it.
