Cane Syrup Vinaigrette

½ pound apple wood smoked bacon (diced) (any bacon will work)
1 cup cane syrup (honey if you can't find cane syrup)
¼ oz Apple Cider Vinegar
¼ oz Balsamic Vinegar
1 each Garlic
1 each Shallot
1 quart blended oil ( sub weed oil)
Salt and Pepper

Render diced bacon, add bacon fat to vinegars and reduce by ½. Add garlic and shallots and cook for 1 more minute. Blend in blender with cane syrup, bacon, salt and pepper. Blend with oil, taste and re season.

Note:
This was used for a salad with frisee, arugula and apple. Keep the majority of the greens bitter with a sweet addition.

Also, this is for nearly 30 servings, so keep that in mind.

As you all may have noticed, I've been posting a lot of salad dressing recipes. I find they are easy, and it's easy to incorporate weed oil.

I like to double boil my scrap in vegetable oil, but I was wondering could I do something of the sort to an olive oil or something :joint:
